Monday, May 26, marks the first event of the new season of Chef Under the Stars at the DoubleTree by Hilton Rome Monti.
Kicking off this year’s edition is Michelin one-star Chef Paolo Gramaglia of President Restaurant in Pompeii, in collaboration with the Hotel’s Resident Chef.

Paolo Gramaglia, born in Naples in 1964, studied Mathematics at the “Federico II” University of Naples. Since 2006, he has led the President restaurant in Pompeii as both executive chef and owner. The restaurant has been awarded a Michelin star, and his culinary approach centers on a personal interpretation of tradition, blending precision with creative exploration.
Each year, his work is shaped by a guiding concept, such as “subtract to multiply”, which involves reducing elements to enhance the overall guest experience.
In 2021, he began a collaboration with Fedegroup, overseeing the kitchens of seven hotel restaurants located in Friuli Venezia Giulia, Tuscany, Veneto, and Campania.
